Update the star history chart URL in the README. The current chart is broken due to GitHub stargazer API restrictions, so it now points to a working alternative.

The star history chart in the README is currently broken because the GitHub stargazer API restricts the data source it relies on. This PR updates the chart to use a working alternative that serves the same chart without requiring an API token. Repositories with hundreds of thousands of stargazers already rely on it successfully.
